Ingredients

  • Italian Sausage Links: 1 pound, sliced into 1-inch pieces
  • Yukon Gold Potatoes: 4 medium, diced
  • Bell Peppers: 3 large (red, yellow, green), sliced
  • Yellow Onion: 1 large, sliced
  • Garlic: 3 cloves, minced
  • Olive Oil: 2 tablespoons
  • Italian Seasoning: 1 teaspoon
  • Paprika: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Fresh Parsley: 2 tablespoons, chopped

Instructions

  1. Preheat Your Equipment: Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Combine Ingredients: Add sausage slices and cook until browned on all sides, about 5–7 minutes. Remove and set aside.
  3. Prepare Your Cooking Vessel: In the same skillet, add more olive oil if needed. Add potatoes and cook for 10–12 minutes until golden and fork-tender.
  4. Assemble the Dish: Add onions and bell peppers to the skillet. Sauté for 5–7 minutes until softened. Add garlic, Italian seasoning, paprika, salt, and pepper. Stir to combine.
  5. Cook to Perfection: Return sausage to the skillet. Stir everything together and cook another 5 minutes, allowing flavors to meld.
  6. Finishing Touches: Sprinkle with fresh parsley and optional lemon juice or balsamic.
