Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1/2 cup powdered sugar
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat Your Equipment: Preheat oven to 325°F (165°C) and line an 8×8-inch pan with parchment paper.
  2. Combine Ingredients: In a bowl, whisk together flour, powdered sugar, and sea salt. Add butter and cut in until mixture resembles coarse crumbs. Stir in lemon zest and vanilla to form a soft dough.
  3. Prepare Your Cooking Vessel: Press dough evenly into the lined pan and flatten the surface.
  4. Assemble the Dish: Lightly score the dough into bars or squares and sprinkle with flaky salt.
  5. Cook to Perfection: Bake for 30–35 minutes, until the edges are lightly golden. Cool completely in pan.
  6. Finishing Touches: Cut along the scored lines once cooled and optionally dust with extra lemon zest.
  7. Serve and Enjoy: Serve with tea, coffee, or as a crisp snack anytime.

Notes

  • Use high-quality butter for best flavor and texture.
  • Chill dough before baking for sharper edges and better structure.
  • Add a quick lemon glaze for an extra citrusy finish.
