Soft and fluffy yeast rolls packed with sharp cheddar and spicy jalapeños, finished with a sweet and salty honey butter glaze.

Ingredients

Scale
  • 4 cups All-Purpose Flour
  • 1 1/4 cups Warm Milk
  • 1/4 cup + 2 tablespoons Honey
  • 2 1/4 teaspoons Active Dry Yeast
  • 1/2 cup Butter, softened
  • 1 1/2 cups Sharp Cheddar Cheese, shredded
  • 2 medium Jalapeños, finely diced
  • 1 large Egg
  • 1 teaspoon Flaky Sea Salt

Instructions

  1. Whisk warm milk, yeast, and 1 tablespoon of honey in a stand mixer bowl; let sit for 5-10 minutes until foamy.
  2. Add the remaining honey, egg, softened butter, and flour. Use a dough hook to knead until smooth and elastic.
  3. Fold in the shredded cheddar and diced jalapeños until evenly distributed.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 60-90 minutes until doubled in size.
  5. Punch down dough and divide into 12 equal pieces. Shape into balls and place in a greased 9×13 inch pan.
  6. Cover and let rise again for 30 minutes. Preheat oven to 375°F (190°C).
  7. Bake for 20-25 minutes until golden brown.
  8. Melt remaining butter with 2 tablespoons of honey and brush over hot rolls. Sprinkle with flaky sea salt.

Notes

  • Use a thermometer to ensure milk is exactly 105-110°F.
  • Freshly grated cheese melts much better than pre-shredded.
  • Remove jalapeño seeds for a milder roll.
