Air Fryer Roque Monsieur

A pork-free twist on the classic Roque Monsieur, featuring gooey cheese, creamy béchamel, and your choice of mushrooms or turkey — all air-fried to crispy, melty perfection.

Ingredients

  • 8 slices thick white bread
  • 1 cup shredded mozzarella or Gruyère cheese
  • 4 large eggs
  • 1 cup sautéed mushrooms or turkey slices
  • 2 tablespoons salted butter
  • 1 cup béchamel sauce
  • 1 tablespoon all-purpose flour
  • 3/4 cup milk
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 375°F (190°C) for 3–5 minutes.
  2. Prepare béchamel: melt butter in a saucepan, whisk in flour, then gradually add milk until thickened. Season with nutmeg, salt, and pepper.
  3. Place parchment paper in air fryer basket. Lightly toast bread slices for 2 minutes.
  4. Spread béchamel on one side of each bread slice.
  5. Layer 4 slices with mushrooms or turkey and a sprinkle of cheese. Top with the remaining slices, béchamel side in.
  6. Spread béchamel and cheese on top, then gently crack an egg onto each sandwich.
  7. Place in the air fryer and cook for 6–8 minutes, or until cheese is melted and egg is set.
  8. Let cool slightly before serving.

Notes

  • Use thick bread to prevent sogginess.
  • Drain sautéed mushrooms well before adding.
  • Crack eggs gently into an indentation to keep them from sliding off.
