A fun and creamy homemade rolled ice cream recipe with your favorite mix-ins and toppings. No machine needed, just a frozen tray and a spatula for this delightful DIY dessert.

Ingredients

  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup mix-ins of choice (strawberries, cookies, chocolate chips, etc.)
  • Toppings of choice (whipped cream, sauces, fruit, candy, etc.)

Instructions

  1. Freeze a metal sheet pan or flat tray overnight until completely solid.
  2. In a bowl, whisk together heavy cream, sweetened condensed milk, and vanilla extract until smooth.
  3. Pour a thin layer of the mixture onto the frozen tray. Add mix-ins and chop them into the base using a spatula.
  4. Spread the mixture evenly across the tray and freeze again for about 2 hours until firm.
  5. Once frozen, use a spatula to scrape and roll the ice cream into curls.
  6. Place rolls upright in serving cups and top with whipped cream, fruit, or other garnishes.

Notes

  • Freeze your tray and spatula overnight for easier rolling.
  • Work quickly once the base is frozen to prevent melting.
  • Use two spatulas if needed to help lift and roll the curls evenly.
