Roasted Blueberry French Toast Crostini is a bite-sized brunch treat with custard-soaked toasted bread and juicy roasted blueberries. It’s crispy, creamy, and perfect for any occasion.

Ingredients

  • Baguette: 1 baguette, sliced into ½-inch rounds
  • Fresh Blueberries: 1½ cups
  • Eggs: 2 large
  • Milk: ½ cup whole milk
  • Vanilla Extract: 1 teaspoon
  • Cinnamon: ½ teaspoon
  • Maple Syrup: 2 tablespoons
  • Butter: 2 tablespoons, melted
  • Salt: Pinch

Instructions

  1. Preheat Your Equipment: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: In a bowl, toss blueberries with 1 tablespoon of maple syrup and a pinch of salt. In another bowl, whisk together eggs, milk, vanilla extract, cinnamon, and the remaining 1 tablespoon of maple syrup.
  3. Prepare Your Cooking Vessel: Place the blueberry mixture on half of the baking sheet. Arrange baguette slices on the other half. Lightly brush each slice with melted butter.
  4. Assemble the Dish: Dip each buttered bread slice quickly into the custard mixture and place back on the baking sheet.
  5. Cook to Perfection: Roast for 10–12 minutes, until the berries burst and the toast is golden and slightly puffed.
  6. Finishing Touches: Spoon the warm, syrupy blueberries over each slice. Drizzle with extra maple syrup if desired.
  7. Serve and Enjoy: Plate while warm. Garnish with a sprinkle of powdered sugar or fresh mint if you like.

Notes

  • Use day-old bread for best texture.
  • Let roasted blueberries cool slightly before topping to prevent soggy toast.
  • Sprinkle with lemon zest or mint for a fresh finish.
  • Try different fruits like raspberries or apples for variation.
