Soft and fluffy homemade potato rolls topped with flaky sea salt and aromatic caraway seeds. Perfect for dinner, soups, or sandwich sliders — these rolls are comforting, flavorful, and stay fresh for days.

  • 3 1/2 cups all-purpose flour
  • 1 cup mashed potatoes (room temperature)
  • 3/4 cup warm whole milk
  • 1/4 cup unsalted butter, melted (plus extra for brushing)
  • 2 1/4 teaspoons active dry yeast
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1 large egg
  • 1 tablespoon caraway seeds
  • 1 tablespoon flaky sea salt

Instructions

  1. In a small bowl, dissolve yeast and 1 tablespoon of sugar in warm milk. Let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour, mashed potatoes, remaining sugar, salt, melted butter, and egg. Add in yeast mixture and stir to form a dough.
  3. Knead the dough for 8–10 minutes until soft and slightly sticky. Transfer to a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Punch down dough and divide into 15 equal pieces. Shape into smooth balls and place in a greased 9×13-inch baking dish or on a baking sheet.
  5. Cover and let rise again for 30–40 minutes until puffy. Preheat oven to 375°F (190°C).
  6. Brush rolls with melted butter, then sprinkle with flaky sea salt and caraway seeds.
  7. Bake for 18–22 minutes or until golden brown. Brush with more butter out of the oven if desired. Serve warm.

Notes

  • Use leftover mashed potatoes or make fresh — just keep them smooth and not too wet.
  • Chill the dough after the first rise if making ahead. Shape and bake the next day.
  • Swap caraway for sesame or poppy seeds for a different flavor twist.
