Ingredients

  • Russet Potatoes: 4 medium, thinly sliced
  • Olive Oil: 2 tablespoons
  • Onion: 1 large, chopped
  • Garlic: 3 cloves, minced
  • Canned Diced Tomatoes: 1 can (15 oz)
  • Tomato Sauce: 1 cup
  • Frozen Corn: 1 cup
  • Green Bell Pepper: 1 chopped
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Dried Oregano: 1 teaspoon
  • Paprika: 1/2 teaspoon
  • Shredded Cheese: 1 cup (optional)
  • Fresh Parsley: Optional, for garnish

Instructions

  1. Preheat Your Equipment: Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
