  • 1 ¾ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • A few drops pink gel food coloring
  • ½ teaspoon vanilla extract
  • ½ cup buttercream or jam filling of choice

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper or silicone mats.
  2. Sift almond flour and powdered sugar together and set aside.
  3. Beat egg whites until foamy, gradually add granulated sugar, and whip until stiff peaks form. Add vanilla and food coloring.
  4. Fold dry ingredients into meringue gently until the batter flows like lava and forms ribbons.
  5. Pipe circles onto prepared sheets using a piping bag. Tap trays to release air bubbles and let rest for 30–45 minutes until a skin forms.
  6. Bake for 14–16 minutes. Let cool completely before removing.
  7. Pair similar-sized shells and pipe filling on one side. Sandwich gently and refrigerate for best results.
