  • 4 medium chicken breasts (about 650 grams)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 120 grams mozzarella cheese, sliced or shredded
  • 1/2 cup basil pesto
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons fresh basil, sliced
  • 1 clove garlic, minced (optional)
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season chicken with salt and black pepper.
  3. Cook chicken for 5 to 6 minutes per side until golden and fully cooked.
  4. Top each chicken breast with mozzarella and cover until melted.
  5. Spoon pesto evenly over the melted cheese.
  6. In a bowl, mix cherry tomatoes, basil, and garlic.
  7. Spoon tomato mixture over the chicken.
  8. Drizzle with balsamic glaze if desired.
  9. Remove from heat.
  10. Serve warm and enjoy.
