This Pecan Bread is a sweet, nutty loaf loaded with toasted pecans and a soft, tender crumb. Perfect for breakfast, dessert, or snacking, it can be topped with an optional vanilla glaze for extra indulgence.

  • 1 cup chopped pecans, toasted
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Optional Glaze: 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper for easy removal.
  2. In a medium bowl, combine flour, sugar, baking powder, and salt. Stir in the toasted pecans.
  3. In a separate bowl, whisk together eggs, melted butter, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined—avoid overmixing.
  5. Pour the batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  6. For the optional glaze, whisk powdered sugar, milk, and vanilla until smooth, then drizzle over cooled bread.

Notes

  • Toast pecans beforehand for deeper flavor.
  • Do not overmix the batter to keep the bread tender.
  • Cool completely before adding glaze to prevent melting.
  • This bread freezes well; wrap tightly in plastic wrap and store in a freezer bag.
