A comforting skillet dinner featuring golden pan-seared salmon nestled with juicy cherry tomatoes and soft mozzarella, finished with fresh herbs and olive oil.

Ingredients

  • Salmon fillets, 4 pieces (6 ounces each)
  • Cherry tomatoes, 2 cups
  • Fresh mozzarella balls, 8 ounces
  • Olive oil, 2 tablespoons
  • Garlic cloves, 3 minced
  • Fresh oregano or basil, 2 tablespoons chopped
  • Salt, 1 teaspoon
  • Black pepper, 1/2 teaspoon

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Season the salmon fillets evenly with salt and black pepper.
  3. Add olive oil to the hot skillet and allow it to heat until shimmering.
  4. Place the salmon fillets in the skillet and cook undisturbed until golden.
  5. Flip the salmon, add garlic and cherry tomatoes, and cook until tomatoes soften.
  6. Gently add mozzarella balls and sprinkle with fresh herbs.
  7. Remove from heat and allow flavors to settle before serving.

  • Pat the salmon dry before cooking for better searing.
