Ingredients
Salmon fillets, 4 pieces (6 ounces each)
Cherry tomatoes, 2 cups
Fresh mozzarella balls, 8 ounces
Olive oil, 2 tablespoons
Garlic cloves, 3 minced
Fresh oregano or basil, 2 tablespoons chopped
Salt, 1 teaspoon
Black pepper, 1/2 teaspoon
Instructions
Heat a large skillet over medium-high heat.
Season the salmon fillets evenly with salt and black pepper.
Add olive oil to the hot skillet and allow it to heat until shimmering.
Place the salmon fillets in the skillet and cook undisturbed until golden.
Flip the salmon, add garlic and cherry tomatoes, and cook until tomatoes soften.
Gently add mozzarella balls and sprinkle with fresh herbs.
Remove from heat and allow flavors to settle before serving.
