Tender slow-cooked beef, sweet onions, melted provolone, and warm, crusty hoagie rolls come together with a rich homemade au jus in this comforting Onion Beef au Jus sandwich recipe.

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 1 packet onion soup mix
  • 3 cups water
  • 2 large sliced onions
  • 6 hoagie rolls
  • 6 slices provolone cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Set your slow cooker to low heat while prepping ingredients.
  2. Season beef with garlic powder and pepper. Place in slow cooker, top with soup mix, water, and sliced onions.
  3. Cover and cook on low for 7–8 hours until beef is tender.
  4. Shred beef and strain the cooking liquid into a saucepan. Simmer to concentrate.
  5. Toast hoagie rolls under broiler, then fill with beef and top with provolone.
  6. Return sandwiches to broiler for 1–2 minutes until cheese melts.
  7. Brush roll tops with melted butter and sprinkle with parsley.
  8. Serve with warm au jus in ramekins for dipping.
