One-Pot Chicken Parmesan Mac & Cheese

A cozy, one-pot comfort dish combining creamy mac and cheese with the crispy, cheesy flavors of chicken Parmesan, all in under an hour.

Ingredients

  • Boneless Skinless Chicken Breasts: 1 pound, cut into bite-sized pieces
  • Olive Oil: 2 tablespoons
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Garlic Cloves: 3, minced
  • Chicken Broth: 4 cups
  • Elbow Macaroni: 3 cups
  • Marinara Sauce: 2 cups
  • Heavy Cream: 1 cup
  • Mozzarella Cheese: 2 cups shredded
  • Parmesan Cheese: 1 cup grated
  • Italian Seasoning: 1 teaspoon
  • Fresh Parsley: 2 tablespoons chopped

Instructions

  1. Preheat Your Equipment: Warm your Dutch oven or deep skillet over medium heat.
  2. Combine Ingredients: Season chicken with salt and pepper, then sear in olive oil until golden, about 5 minutes. Remove and set aside.
  3. Prepare Your Cooking Vessel: In the same pot, sauté garlic until fragrant, about 1 minute.
  4. Assemble the Dish: Add chicken broth and bring to a boil. Stir in pasta and cook until almost tender.
  5. Cook to Perfection: Reduce heat, stir in marinara, cream, chicken, Italian seasoning, and half of the cheeses. Stir until melted and creamy.
  6. Finishing Touches: Sprinkle remaining cheeses on top, cover, and let melt. Garnish with parsley.
