One Pot Broccoli Cheese Orzo

Creamy, cheesy, and packed with tender broccoli, this One Pot Broccoli Cheese Orzo is the perfect weeknight comfort food — all made in a single pot!

Ingredients

Scale
  • 1 cup Orzo Pasta
  • 2 cups Broccoli Florets, chopped small
  • 1 ½ cups Cheddar Cheese, freshly shredded
  • ¼ cup Parmesan Cheese, grated
  • 2 cloves Garlic, minced
  • 3 cups Vegetable Broth
  • ½ cup Milk (whole preferred)
  • 1 tablespoon Olive Oil
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Paprika (optional)

Instructions

  1. Preheat Your Equipment: Heat a large pot or deep skillet over medium heat and add olive oil.
  2. Combine Ingredients: Sauté garlic until fragrant, about 30 seconds. Stir in orzo and toast for 1–2 minutes until lightly golden.
  3. Prepare Your Cooking Vessel: Pour in the vegetable broth, stirring constantly to prevent sticking.
  4. Assemble the Dish: Bring to a boil, then reduce to a simmer. Add chopped broccoli and cook for 8–10 minutes, stirring occasionally, until the orzo is tender and most liquid is absorbed.
  5. Cook to Perfection: Stir in the milk, cheddar, and parmesan. Mix until the cheese melts into a smooth, creamy sauce.
  6. Finishing Touches: Season with salt, pepper, and optional paprika. Remove from heat and let sit 2–3 minutes to thicken slightly.
  7. Serve and Enjoy: Spoon into bowls while hot. Garnish with extra cheese or a pinch of herbs if desired.

Notes

  • Use freshly grated cheese for the best melt and flavor.
  • Stir frequently to prevent the orzo from sticking.
  • Add more milk to adjust creaminess when reheating leftovers.
