One Pot Broccoli & Boursin Pasta

This creamy one-pot broccoli and Boursin pasta is the ultimate quick comfort food. Made in under 30 minutes with just a handful of ingredients, it’s rich, cheesy, and full of cozy garlic herb flavor — all in one pot!

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 ½ cups short pasta (orecchiette, shells, or fusilli)
  • 4 cups water or vegetable broth
  • 1 head broccoli, chopped into small florets
  • 1 wheel (5.2 oz) Boursin garlic & herb cheese
  • Salt and pepper to taste
  • Optional: grated parmesan, chili flakes

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté garlic for 1 minute.
  2. Add pasta and 4 cups of water or broth. Bring to a gentle boil and cook for 8 minutes, stirring occasionally.
  3. Stir in broccoli and cook for another 4–5 minutes until pasta and broccoli are tender.
  4. Turn off the heat. Add Boursin cheese and stir until creamy and fully melted.
  5. Adjust seasoning with salt and pepper. Add a splash of water if sauce is too thick.
  6. Serve hot with optional parmesan or chili flakes.

Notes

  • Cut broccoli small so it cooks quickly and blends into the sauce.
  • Stir regularly to avoid pasta sticking to the bottom of the pot.
  • Add lemon zest for brightness or rotisserie chicken for protein.
  • Use gluten-free pasta if needed, but stir often.
