Chewy, golden oatmeal raisin cookie bars packed with hearty oats, plump raisins, and warm cinnamon spice, baked into easy slice-and-serve squares perfect for snacking or dessert.

Ingredients

  • All-Purpose Flour: 1 1/2 cups
  • Old-Fashioned Rolled Oats: 2 cups
  • Baking Soda: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Ground Cinnamon: 1 teaspoon
  • Unsalted Butter: 1 cup (2 sticks), softened
  • Brown Sugar: 1 cup, packed
  • Granulated Sugar: 1/2 cup
  • Eggs: 2 large
  • Vanilla Extract: 2 teaspoons
  • Raisins: 1 cup

Instructions

  1. Preheat oven to 175°C (350°F). Line an 8×8 or 9×13 baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Fold in raisins.
  5. Spread dough evenly into the prepared baking pan, smoothing the top with a spatula.
  6. Bake for 25 to 30 minutes, until golden at the edges and just set in the center.
  7. Cool in pan for at least 20 minutes before slicing into bars.
