Ingredients

Scale
  • 3 cups rolled oats
  • 1 cup peanut butter
  • 3/4 cup honey
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line an 8×8 inch baking dish with parchment paper and set aside.
  2. In a small saucepan over low heat, combine peanut butter, honey, and vanilla extract. Stir until smooth and melted.
  3. In a large mixing bowl, pour the warm mixture over the rolled oats and mix until everything is coated.
  4. Press the oat mixture evenly into the prepared baking dish, pressing it down firmly.
  5. Melt the chocolate chips in a heatproof bowl set over simmering water, stirring until smooth.
  6. Spread the melted chocolate evenly over the oat base.
  7. Tap the dish gently to smooth the chocolate layer, then refrigerate for at least 2 hours or until firm.
  8. Remove from the dish using the parchment paper, slice into bars, and serve.

Notes

  • Use natural peanut butter for a richer flavor and better texture.
  • Chill overnight for cleaner slices and stronger hold.
  • A sprinkle of flaky sea salt on top enhances the flavor beautifully.
