Bright and citrusy cupcakes inspired by the classic Moscow Mule, made completely alcohol-free with fresh lime, ginger, and cream cheese frosting. Refreshing and perfect for any celebration.

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 cup unsalted butter (softened)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • Zest of 2 limes
  • 3 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 4 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened, for frosting)
  • 2 cups powdered sugar
  • Extra lime zest, lime slices, and fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a bowl, whisk flour, baking powder, salt, and ground ginger.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs, then mix in lime zest, juice, and vanilla.
  4. Add dry ingredients alternately with milk, mixing just until combined.
  5. Divide batter evenly among liners and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Cool cupcakes completely on a wire rack before frosting.
  7. To make frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and beat until fluffy.
  8. Pipe frosting onto cooled cupcakes and garnish with lime zest, mint leaves, and lime slices.

  • Use fresh lime zest and juice for best flavor.
  • Add garnishes just before serving to keep them fresh and vibrant.
  • Store frosted cupcakes in the fridge and bring to room temp before serving.
