Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup heavy cream, plus more for brushing
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (optional)
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk cream, egg, and vanilla. Add to the dry mixture and stir gently until just combined. Fold in berries if using.
  5. Turn dough onto a floured surface and shape into a 1-inch thick circle. Cut into 8 wedges and place on the baking sheet.
  6. Brush with cream and sprinkle with coarse sugar if desired.
  7. Bake for 18–22 minutes or until golden and firm to the touch.
  8. Cool slightly before serving. Drizzle with icing if desired.
