Loaded Potato Soup

Loaded Potato Soup is a rich, creamy, and comforting dish packed with tender potatoes, smoky bacon, cheddar cheese, and green onions. It’s the ultimate cozy meal for cold days, delivering all the flavors of a loaded baked potato in a warm bowl.

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove bacon with a slotted spoon and set aside, leaving drippings in the pot.
  2. Add diced onion to the pot and sauté for 4–5 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux. Slowly whisk in milk and heavy cream until smooth and thickened.
  5. Pour the cream mixture into the potato pot. Stir in salt, pepper, and shredded cheddar cheese until melted and combined.
  6. Stir in sour cream, then taste and adjust seasoning if needed.
  7. Serve hot, topped with crispy bacon, extra cheese, and chopped green onions.

Notes

  • For a smoother soup, mash some of the potatoes with a potato masher before adding the cream mixture.
  • Use Yukon gold potatoes for a creamier texture, or russet potatoes for a fluffier consistency.
  • This soup can be made ahead and reheated gently on the stove.
