A bright and zesty salad featuring peppery arugula, salty shaved parmesan, and toasted sesame seeds, all tossed in a light lemon and honey dressing.

Ingredients

  • 6 cups Fresh Arugula or Mixed Greens
  • 0.5 cups Parmesan Cheese wedge, shaved
  • 3 tbsp Sesame Seeds
  • 3 tbsp Fresh Lemon Juice
  • 4 tbsp Extra Virgin Olive Oil
  • 1 tsp Dijon Mustard
  • 1 tsp Honey
  • 0.5 tsp Sea Salt
  • 0.5 tsp Cracked Black Pepper

Instructions

  1. Toast sesame seeds in a dry skillet over medium heat for 1 to 2 minutes until golden and fragrant.
  2. In a small jar, shake together lemon juice, olive oil, Dijon mustard, honey, salt, and pepper until emulsified.
  3. Place dry greens in a large bowl.
  4. Drizzle the dressing over the greens and toss gently to coat.
  5. Use a vegetable peeler to shave parmesan curls directly onto the salad.
  6. Sprinkle the toasted sesame seeds over the top and serve immediately.

Notes

  • Ensure greens are completely dry so the dressing adheres properly.
  • Toast seeds fresh for the best aroma and flavor.
