  • 4 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes
  • 1 lemon, sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • ¼ cup grated parmesan cheese
  • Fresh parsley, optional, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, garlic, honey, Dijon mustard, salt, and pepper.
  3. Spread asparagus and cherry tomatoes on the tray. Drizzle with olive oil and season lightly.
  4. Add lemon slices throughout the tray for flavor infusion.
  5. Place salmon fillets skin-side down and coat with the garlic lemon marinade.
  6. Bake for 15 to 18 minutes, or until the salmon flakes easily and vegetables are tender.
  7. Sprinkle with grated parmesan and parsley just before serving.
