Hearty and comforting Lasagna Soup combines tender lasagna noodles, savory ground beef, creamy ricotta, and rich tomato broth into one cozy bowl. Perfect for weeknight dinners or family gatherings.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste
  • 810 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, optional for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and sauté until soft, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in tomato paste, crushed tomatoes, and beef broth. Season with Italian herbs, salt, and pepper. Bring to a simmer.
  5. Add broken lasagna noodles and cook for 10–12 minutes, until noodles are tender.
  6. Reduce heat and stir in heavy cream. Adjust seasoning as needed.
  7. Ladle soup into bowls. Top each serving with ricotta, mozzarella, and Parmesan cheese. Garnish with basil or parsley if desired.
  8. Serve warm with crusty bread or garlic toast.
