Ingredients

  • Fresh Carrots: 1 pound
  • Honey: 3 tablespoons
  • Dairy-Free Butter: 2 tablespoons
  • Extra Virgin Olive Oil: 1 tablespoon
  • Fresh Thyme: 2 sprigs
  • Sea Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Water: 1/2 cup

Instructions

  1. Melt dairy-free butter and olive oil in a large skillet over medium heat.
  2. Whisk in the honey, salt, and pepper until well combined.
  3. Add the carrots and fresh thyme sprigs to the skillet in a single layer.
  4. Pour in the water, cover with a lid, and simmer for 8 to 10 minutes until carrots are tender.
  5. Remove the lid and increase heat slightly, tossing carrots frequently until the liquid reduces to a thick, glossy glaze.
  6. Garnish with extra fresh thyme leaves and serve hot.

Notes

  • Slice carrots on a bias for more surface area to catch the glaze.
  • If using baby carrots, cooking time may be slightly shorter.
  • For a vegan version, substitute maple syrup for the honey.
