  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef stew meat and brown on all sides, about 5–7 minutes.
  2. Add diced onion and cook for 3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add carrots, celery, potatoes, green beans, corn, diced tomatoes, and beef broth to the pot.
  4. Season with salt, black pepper, thyme, parsley, and add the bay leaf.
  5. Bring the soup to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours, or until beef is tender and vegetables are cooked through.
  6. Remove bay leaf before serving. Taste and adjust seasoning if needed.
  7. Serve hot with crusty bread or crackers.

Notes

  • For deeper flavor, brown the beef well before adding liquids.
  • You can add other vegetables like peas, zucchini, or cabbage based on preference.
  • This soup freezes well for up to 3 months.
