A superior homemade version of the classic British biscuit, featuring tender, buttery shortbread sandwiched with sweet raspberry jam.

Ingredients

  • 1 cup Unsalted Butter, softened
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 1/2 cups All Purpose Flour
  • 1/4 teaspoon Salt
  • 1/2 cup Raspberry Jam
  • 1 tablespoon Whole Milk (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until smooth and creamy.
  3. Stir in the vanilla extract and salt.
  4. Gradually add the flour, mixing until a soft dough forms. Add a splash of milk if the dough is too crumbly to hold together.
  5. Roll the dough out on a lightly floured surface to about 1/4 inch thickness.
  6. Cut out an equal number of fluted rounds. Use a small heart cutter to remove the center from half of the rounds.
  7. Place the biscuits on the prepared sheets and bake for 10-12 minutes until firm but still pale.
  8. Cool completely on a wire rack.
  9. Dust the heart-cutout biscuits generously with powdered sugar.
  10. Spread a teaspoon of raspberry jam onto the center of each solid biscuit base.
  11. Top with the sugared heart biscuits and press gently to sandwich them together.

Notes

  • Chill the cut-out dough shapes for 15 minutes before baking to help them keep their shape perfectly.
  • Use a high-quality, thick jam to ensure it stays in place between the biscuits.
  • Dust the top biscuits with sugar before assembly to keep the jam centers bright and clear.
