Ingredients

  • Pasta: 12 ounces (spaghetti, linguine, or penne)
  • Avocados: 2 large, ripe
  • Garlic: 2 cloves
  • Lime Juice: From 1 large lime
  • Olive Oil: 2 tablespoons
  • Fresh Cilantro: ¼ cup, chopped
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: ¼ cup, finely diced
  • Salt and Pepper: To taste
  • Red Chili Flakes (optional): Pinch

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to boil.
  2. Combine Ingredients: In a blender, combine avocados, garlic, lime juice, olive oil, cilantro, salt, and pepper. Blend until creamy.
  3. Prepare Your Cooking Vessel: Cook pasta until al dente. Reserve ½ cup of cooking water, then drain.
  4. Assemble the Dish: Toss hot pasta with avocado sauce. Add reserved pasta water if needed.
  5. Cook to Perfection: Let warm pasta slightly heat the sauce for a silky texture.
  6. Finishing Touches: Fold in cherry tomatoes and red onion. Add chili flakes if desired.
  7. Serve and Enjoy: Garnish with fresh cilantro and lime wedges. Serve immediately.

Notes

  • Use ripe avocados for the best creamy texture.
  • Eat fresh—avocado sauce doesn’t keep long.
  • Add grilled chicken, shrimp, or chickpeas for protein.
  • Chill leftovers and enjoy as a pasta salad.
