These rich and refreshing Grasshopper Brownies combine a fudgy chocolate base, cool mint cream layer, and a glossy chocolate topping. Perfect for parties, holidays, or anytime you want a layered dessert that’s as stunning as it is delicious.

Ingredients

  • 1/2 cup unsalted butter (for brownie layer)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups powdered sugar (for mint layer)
  • 1/2 cup softened butter (for mint layer)
  • 2 tablespoons milk or cream
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup semi-sweet chocolate chips (for topping)
  • 2 tablespoons butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 pan with parchment.
  2. In a bowl, melt 1/2 cup butter. Stir in sugar, eggs, and vanilla. Mix in cocoa, flour, and salt.
  3. Spread brownie batter evenly into the pan and bake for 20–25 minutes. Let cool completely.
  4. For the mint layer, beat powdered sugar, softened butter, milk, peppermint extract, and green coloring until fluffy.
  5. Spread mint mixture over cooled brownies and chill for 30 minutes.
  6. Melt chocolate chips and 2 tablespoons butter until smooth. Cool slightly and pour over mint layer. Chill until firm.
  7. Slice into squares with a warm knife and serve.
