Instructions

  1. Preheat Your Equipment: If roasting in the oven, preheat your broiler. If using a gas burner, have tongs and a heat-safe plate ready.
  2. Combine Ingredients: In a bowl, mix chopped roasted bell peppers, garlic, onion, sun-dried tomatoes, salt, and pepper. Set aside.
  3. Prepare Your Cooking Vessel: Bring a large pot of salted water to a boil for the pasta. At the same time, heat olive oil in a large skillet over medium heat.
  4. Assemble the Dish: Add the garlic mixture to the skillet and sauté until fragrant and golden. Stir in 1/4 cup of pasta water to create a sauce.
  5. Cook to Perfection: Boil the farfalle according to package instructions until al dente. Reserve 1/4 cup of pasta water and drain.
  6. Finishing Touches: Toss the cooked pasta directly into the skillet with the sauce. Add chopped basil and more pasta water if needed. Mix until glossy and well coated.
  7. Serve and Enjoy: Plate the pasta, drizzle with olive oil, and garnish with extra herbs or vegan parmesan. Enjoy immediately!

Notes

  • Use fresh garlic for the richest flavor.
  • Don’t skip roasting the bell peppers—it adds depth and sweetness.
  • Reserve pasta water to help the sauce cling to the pasta.
  • Add a dash of lemon juice for brightness if desired.
