  • 4 cups zucchini, sliced
  • 1 onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup breadcrumbs
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Boil zucchini slices for 2-3 minutes, then drain well.
  3. In a bowl, mix sour cream, mayonnaise, garlic powder, salt, and pepper.
  4. Stir in zucchini, onions, and 3/4 cup cheddar cheese.
  5. Transfer mixture to the prepared baking dish.
  6. Combine breadcrumbs with melted butter and sprinkle over the top along with remaining cheese.
  7. Bake uncovered for 25-30 minutes or until golden and bubbly.

Notes

  • Drain zucchini thoroughly to avoid a watery casserole.
  • Add crushed Ritz crackers instead of breadcrumbs for a buttery topping.
