A refreshing, frosty, and sophisticated summer mocktail made with blended frozen peaches and sparkling apple cider, topped with a fresh strawberry garnish.

  • 16 ounces Frozen Peach Slices (unsweetened)
  • 1 cup Peach Nectar
  • 2 cups Sparkling Apple Cider (chilled)
  • 1 tablespoon Fresh Lemon Juice
  • 2 tablespoons Simple Syrup (or to taste)
  • 4 Fresh Strawberries (whole, for garnish)

Instructions

  1. Place the frozen peach slices, peach nectar, lemon juice, and simple syrup into a high-speed blender.
  2. Pulse on high speed until the mixture is completely smooth and thick.
  3. Pour in the chilled sparkling apple cider.
  4. Give the mixture one very brief pulse to incorporate the bubbles without losing the fizz.
  5. Taste and adjust sweetness with extra simple syrup or lemon juice if desired.
  6. Slice a small notch into each strawberry and place it on the rim of four chilled glasses.
  7. Pour the frozen Bellini into the glasses and serve immediately.

Notes

  • Use completely frozen peaches to ensure a thick, slushy texture rather than a watery one.
  • Pulse the blender instead of running it continuously to keep the drink from melting too quickly.
  • Chill your glassware in the freezer for 10 minutes before serving to keep the drink frosty.
  • A high-powered blender is recommended to eliminate any large ice chunks for a velvety finish.
