Soft, buttery cookies packed with rainbow sprinkles and chocolate chips, featuring a surprise velvety vanilla frosting center.

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar, packed
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Rainbow Sprinkles
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Prepared Vanilla Frosting, chilled into dollops

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugars until light and fluffy. Beat in eggs and vanilla.
  3. Whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.
  4. Fold in sprinkles and chocolate chips.
  5. Flatten a tablespoon of dough, place a chilled frosting dollop in the center, and seal the dough around it.
  6. Place on baking sheets and bake for 10-12 minutes until edges are golden.
  7. Cool on the sheet for 5 minutes before moving to a wire rack.

Notes

  • Freeze frosting dollops for 20 minutes before stuffing to prevent leaking.
  • Do not overbake; centers should look slightly soft when removed.
  • Store in an airtight container for up to 3 days.
