Buttery, chewy French Blondies infused with grapefruit zest and juice, studded with white chocolate chips and walnuts, for a citrusy twist on a classic favorite.

  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts
  • Zest of 1 grapefruit
  • 2 tablespoons grapefruit juice
  • Powdered sugar, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix melted butter, brown sugar, eggs, vanilla, grapefruit zest, and juice until smooth.
  4. Fold in the dry ingredients until just combined, then stir in white chocolate chips and chopped walnuts.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25 to 28 minutes or until golden and a toothpick inserted comes out with moist crumbs.
  7. Let cool in the pan for 15 minutes, then lift out and cool completely on a rack.
  8. Dust with powdered sugar if desired, slice, and serve.
