Fluffy Egg Cups

Light, airy, and packed with flavor, these Fluffy Egg Cups are the perfect make-ahead breakfast or brunch treat. Filled with fresh vegetables and melty cheese, they’re as comforting as they are convenient.

Ingredients

  • 6 large eggs
  • 1/4 cup whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped spinach
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons chopped green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a muffin tin or line with silicone liners.
  2. In a mixing bowl, whisk eggs and milk until fluffy.
  3. Stir in cheese, spinach, bell pepper, green onion, salt, and pepper.
  4. Pour mixture evenly into muffin cups, filling about two-thirds full.
  5. Bake for 18–20 minutes, or until puffed and lightly golden.
  6. Let rest for 2–3 minutes before removing from the tin.
  7. Serve warm and enjoy.

Notes

  • Use freshly shredded cheese for better melting.
  • Chop vegetables finely for even cooking.
  • Let the cups cool slightly before removing to prevent breakage.
