Velvety, protein-packed egg bites made with cottage cheese and Gruyere for a coffee-shop quality breakfast at home.

Ingredients

  • 6 Large Eggs
  • 1 cup Cottage Cheese
  • 1 cup Shredded Gruyere Cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Fresh Chives, finely chopped

Instructions

  1. Preheat oven to 300°F and place a pan with water on the bottom rack.
  2. Blend eggs, cottage cheese, salt, and pepper until completely smooth.
  3. Grease a silicone muffin tin.
  4. Distribute shredded cheese and chives into the muffin cups.
  5. Pour egg mixture into cups until 3/4 full.
  6. Bake for 25-30 minutes until set.
  7. Rest for 5 minutes before removing from the tin.

Notes

  • Use a silicone pan for the easiest removal.
  • The water bath in the oven is crucial for the velvety texture.
  • Do not over-blend to avoid the bites collapsing.
