  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks
  • 1/4 cup white vinegar
  • 1/3 cup brown sugar
  • 1/2 cup ketchup
  • 2 tablespoons soy sauce

Instructions

  1. Preheat your oven to 400°F or heat a skillet over medium heat if frying.
  2. In a bowl, combine ground beef, egg, breadcrumbs, and chopped onion until just mixed.
  3. Grease a baking tray or heat oil in the skillet.
  4. Form the mixture into 1-inch balls and bake for 20 minutes or brown in the skillet.
  5. In a saucepan, mix bell pepper, pineapple, vinegar, brown sugar, ketchup, and soy sauce. Simmer for 10 minutes.
  6. Add meatballs to the sauce and simmer for another 10 minutes.
  7. Stir gently to coat, then let rest for 5 minutes.
  8. Serve over rice or noodles and enjoy.
