A refreshing, no-bake Italian-inspired dessert featuring layers of ladyfingers soaked in strawberry puree and a rich mascarpone cream, topped with fresh sliced strawberries.

Ingredients

Scale
  • 2 lbs Fresh Strawberries
  • 16 oz Mascarpone Cheese
  • 2 cups Heavy Whipping Cream
  • 14 oz Ladyfinger Biscuits
  • 3/4 cup Granulated Sugar
  • 1 tbsp Vanilla Extract
  • 1/2 cup Orange Juice

Instructions

  1. In a blender, puree half of the strawberries with 1/4 cup sugar and the orange juice until smooth.
  2. In a large bowl, whip the heavy cream, remaining sugar, and vanilla until stiff peaks form. Gently fold in the room-temperature mascarpone.
  3. Quickly dip ladyfingers into the strawberry puree and layer them in the bottom of a 9×13 dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add another layer of dipped ladyfingers and top with the remaining cream.
  6. Slice the remaining fresh strawberries and arrange them on top.
  7. Refrigerate for at least 4 hours before serving.

Notes

  • Do not over-soak the ladyfingers or the dish will become soggy.
  • Ensure mascarpone is at room temperature for a smooth consistency.
  • Best made 24 hours in advance.
