  • 36 Golden Sandwich Cookies
  • 6 tablespoons Unsalted Butter, melted
  • 1.5 quarts Strawberry Ice Cream, slightly softened
  • 1 cup Heavy Whipping Cream
  • 2 cups Fresh Strawberries, sliced

Instructions

  1. Pulse golden sandwich cookies in a food processor until fine crumbs form.
  2. Combine the cookie crumbs with melted butter in a bowl and stir until well incorporated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
  4. Spread the softened strawberry ice cream evenly over the crust and smooth the top with a spatula.
  5. Cover and freeze for at least 6 hours or until completely firm.
  6. Before serving, whip the heavy cream until stiff peaks form and spread it over the ice cream layer.
  7. Top with fresh sliced strawberries, remove the pan sides, and serve immediately.
