A simple yet flavorful pasta dish featuring dried cherry tomatoes, garlic, fresh basil, and parmesan. Perfect for a quick dinner, this dish combines rich tomato flavor with aromatic garlic and fresh herbs, creating a satisfying meal.

Ingredients

  • Dried cherry tomatoes: ½ cup
  • Pasta: 200 grams
  • Olive oil: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Fresh basil: A handful
  • Parmesan cheese: ¼ cup, grated

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to a boil for the pasta. Set a sauté pan over medium heat for the garlic and olive oil.
  2. Combine Ingredients: While the water comes to a boil, mince the garlic, slice the basil, and have your dried tomatoes and cheese ready.
  3. Prepare Your Cooking Vessel: Boil the pasta according to the package directions until al dente. Once cooked, drain and set aside, reserving a little pasta water.
  4. Assemble the Dish: In the sauté pan, heat the olive oil over medium heat. Add the garlic and cook for about 1 minute until fragrant. Add the dried cherry tomatoes and sauté for another 2 minutes.
  5. Cook to Perfection: Add the pasta to the pan with the garlic and tomatoes. Toss to combine, adding a little pasta water to help the sauce come together.
  6. Finishing Touches: Remove from heat and stir in the fresh basil and grated parmesan. Taste and adjust seasoning if needed.
  7. Serve and Enjoy: Serve the pasta hot with extra parmesan on top for a deliciously satisfying meal.

Notes

  • For extra flavor, try roasting the dried tomatoes in the oven for a few minutes before adding them to the dish.
  • Save some pasta water to help bind the sauce together and create a silky texture.
  • For a vegan version, use plant-based cheese or nutritional yeast instead of parmesan.
