Ingredients

Scale
  • 1216 oz rigatoni or penne pasta
  • 1 lb Italian sausage (casings removed)
  • ½ lb ground beef (optional)
  • 1 cup pepperoni slices
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ onion, chopped
  • 8 oz mushrooms, sliced
  • 1 cup black olives, sliced
  • 2630 oz jar marinara or pizza sauce
  • 2 cups shredded mozzarella
  • 8 oz fresh mozzarella, torn or shredded
  • ½ cup grated Parmesan
  • 12 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Cook pasta until al dente. Drain and set aside.
  3. In a skillet, heat olive oil. Brown sausage and ground beef, then add onion, peppers, mushrooms, and olives. Cook until softened.
  4. Stir in marinara sauce, Italian seasoning, red pepper flakes, salt, and pepper. Simmer 5 minutes.
  5. In a large bowl, combine cooked pasta with the sauce mixture. Mix well.
  6. Layer half of the pasta mix into the baking dish. Sprinkle with half the shredded mozzarella.
  7. Add the remaining pasta mix, then top with remaining mozzarella, fresh mozzarella, and Parmesan. Arrange extra pepperoni slices on top.
  8. Bake uncovered for 25–30 minutes, until bubbly and golden. Broil last 2–3 minutes for crispy cheese top if desired.
  9. Let rest 5 minutes before serving.

Notes

  • Use rigatoni or penne so sauce and cheese cling well.
  • Swap sausage for turkey or veggie sausage to suit your diet.
  • Add spinach, zucchini, or other sautéed veggies for a healthier twist.
  • Make ahead and refrigerate unbaked casserole up to 24 hours.
