A vibrant and satisfying deconstructed sushi bowl featuring crispy tofu, creamy avocado, edamame, cucumber, and spicy mayo over fluffy rice. Crunchy onions on top bring the perfect finishing touch.

Ingredients

  • 14 oz extra-firm tofu, pressed and cubed
  • 3 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 2 tablespoons cornstarch
  • 2 cups cooked white rice
  • 1 cup shelled edamame
  • 1 small cucumber, diced
  • 1 avocado, diced
  • 1 jalapeño, thinly sliced
  • 1/2 cup crispy fried onions
  • 1/4 cup mayonnaise
  • 12 tablespoons sriracha
  • 1 tablespoon rice vinegar (optional)

Instructions

  1. Preheat your skillet or air fryer over medium heat.
  2. In a bowl, toss tofu with soy sauce, garlic powder, and cornstarch until coated.
  3. Add tofu to your cooking vessel with a bit of oil or spray. Cook until golden and crispy, about 10–12 minutes, flipping halfway.
  4. In a small bowl, mix mayonnaise, sriracha, and optional vinegar to make spicy mayo.
  5. To assemble, start with a layer of rice in each bowl.
  6. Top with cooked tofu, edamame, cucumber, avocado, and jalapeño.
  7. Drizzle spicy mayo over the top and finish with crispy fried onions.
  8. Serve immediately and enjoy!

Notes

  • Press tofu well to get the crispiest texture.
  • Chill veggies before serving for a refreshing crunch.
  • Double the spicy mayo if you love sauce!
