Creamy Tuscan Chicken is a rich and comforting one-skillet meal with seared chicken, cherry tomatoes, spinach, and parmesan in a luscious garlic cream sauce. Perfect for a weeknight dinner or a cozy dinner party centerpiece.

Ingredients

  • 4 boneless chicken thighs or breasts (about 1.5 pounds)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach, fresh
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Red pepper flakes (optional), a pinch

Instructions

  1. Preheat a large skillet over medium-high heat.
  2. Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil for 5-6 minutes per side until golden and cooked through. Remove and set aside.
  3. Lower heat to medium. Sauté garlic for 30 seconds. Add cherry tomatoes and cook until they start to burst.
  4. Deglaze the skillet with chicken broth, scraping up brown bits. Stir in heavy cream and parmesan until smooth.
  5. Simmer sauce for 2-3 minutes, then stir in spinach and let wilt.
  6. Return chicken to skillet and spoon sauce over. Simmer 2 more minutes.
  7. Garnish with extra parmesan and red pepper flakes if using. Serve hot.

Notes

  • For extra flavor, use sun-dried tomatoes instead of fresh.
  • Use kale or Swiss chard instead of spinach for variation.
  • Serve with pasta, rice, or crusty bread to soak up the sauce.
