Creamy chicken tortellini soup made with tender shredded chicken, cheese filled pasta, fresh spinach, carrots, and parmesan in a rich silky broth for a comforting one pot meal.

Ingredients

  • 500 grams cooked chicken breast, shredded
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 liter chicken broth
  • 240 milliliters heavy cream
  • 300 grams cheese tortellini
  • 2 cups fresh spinach
  • 60 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red chili flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and carrots and sauté until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Add tortellini and cook until tender.
  6. Lower heat and stir in heavy cream.
  7. Add shredded chicken and spinach and cook until wilted.
  8. Stir in parmesan, salt, and black pepper.
  9. Simmer gently for 2 to 3 minutes.
  10. Serve hot with chili flakes if desired.

Notes

  • Do not boil after adding cream.
  • Use freshly grated parmesan for best flavor.
  • Add extra broth if soup thickens.
  • Reheat on low heat only.
