A fudgy chocolate cookie topped with rich dark chocolate ganache and iconic rainbow candy bits, inspired by the classic snack cake.

  • 1/2 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Heavy Cream
  • 1/4 cup Rainbow Candy Bits

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until fluffy, then beat in the egg and vanilla.
  3. Whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet ingredients until a dough forms.
  5. Scoop rounded tablespoons of dough onto sheets and bake for 8 to 10 minutes.
  6. Cool cookies completely on a wire rack.
  7. Heat heavy cream until simmering, pour over chocolate chips, and let sit for 5 minutes before whisking smooth.
  8. Spread ganache over cooled cookies and immediately top with rainbow candies.

Notes

  • Do not overbake the cookies to maintain a brownie-like fudgy texture.
  • Ensure cookies are completely cool before frosting to prevent the ganache from melting.
  • Dutch-processed cocoa powder provides the darkest, richest flavor.
