Corn Fritters

Crispy on the outside, fluffy on the inside, these Corn Fritters burst with sweet corn flavor and a hint of spice—perfect for brunch or a savory snack.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 1/2 cups fresh or frozen corn kernels
  • 1/4 cup chopped scallions
  • 2 tablespoons chopped fresh cilantro
  • Vegetable oil, for frying

Instructions

  1. Preheat Your Equipment: Set a skillet or frying pan over medium heat and add a thin layer of vegetable oil. Allow it to heat while you prepare the batter.
  2. Combine Ingredients: In a large bowl, whisk together flour, baking powder, salt, pepper, paprika, and garlic powder. In a separate bowl, beat the eggs and milk together, then stir into the dry ingredients until just combined. Fold in corn, scallions, and cilantro.
  3. Prepare Your Cooking Vessel: Ensure the oil in the skillet is shimmering but not smoking. Test by dropping a small amount of batter into the pan—it should sizzle immediately.
  4. Assemble the Dish: Scoop spoonfuls of batter and gently drop them into the hot oil, flattening slightly with the back of the spoon.
  5. Cook to Perfection: Fry for 2–3 minutes per side until golden brown and crisp. Avoid overcrowding the pan to maintain oil temperature.
  6. Finishing Touches: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Lightly sprinkle with salt while still hot.
  7. Serve and Enjoy: Serve warm with a dollop of sour cream or a tangy dipping sauce of your choice.

Notes

  • Use fresh corn for maximum sweetness, but frozen works well too.
  • To make it spicier, add a dash of cayenne pepper or finely chopped jalapeños.
  • For a crispier finish, use a cast iron skillet.
