Rich, layered cookies ‘n’ cream millionaire shortbread bars with a chocolate cookie base, creamy cookies and cream filling, and a silky chocolate top. Perfect for any occasion.

Ingredients

  • 2 cups crushed chocolate sandwich cookies
  • 1 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1 ½ cups white chocolate chips
  • ½ cup crushed cookies (for filling)
  • 1 ½ cups semi-sweet chocolate chips
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Mix the crushed chocolate sandwich cookies with melted butter. Press into the bottom of the pan to form the base and bake for 8–10 minutes. Let cool completely.
  3. Melt white chocolate chips with sweetened condensed milk in a microwave-safe bowl or double boiler. Stir in vanilla extract and ½ cup crushed cookies.
  4. Spread the cream mixture over the cooled base and refrigerate for 30 minutes until set.
  5. Melt semi-sweet chocolate chips with heavy cream until smooth. Pour over the chilled cream layer and spread evenly.
  6. Chill the entire pan for at least 1 hour or until fully set.
  7. Lift out using parchment, slice into squares, and serve.

Notes

  • Use a hot knife for clean slices.
  • Chill each layer thoroughly before adding the next.
  • Store leftovers in an airtight container in the fridge.
  • Freeze for longer storage — up to 2 months.
