Ingredients

  • 1 and 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons instant coffee or espresso powder
  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. Cream together softened butter and powdered sugar until light and fluffy.
  3. Add egg yolk, vanilla extract, and instant coffee. Mix until well combined.
  4. Sift in cocoa powder and flour, add a pinch of salt, and mix until a soft dough forms.
  5. Chill dough for 15–20 minutes.
  6. Roll dough into small ovals. Use a knife or toothpick to press a line down the center to resemble coffee beans.
  7. Place on the baking sheet and bake for 12–15 minutes.
  8. Cool on the tray for 5 minutes before transferring to a wire rack.
