Ingredients

  • White Fish Fillets: 500g, boneless and skinless (cod, haddock, or tilapia)
  • Coconut Milk: 400ml (1 can)
  • Fish Stock or Water: 500ml
  • Fresh Lime Juice: 2 tablespoons
  • Lemongrass Stalks: 2, bruised and chopped
  • Ginger: 1 tablespoon, grated
  • Garlic: 3 cloves, minced
  • Shallots: 2, finely sliced
  • Red Chili: 1, thinly sliced
  • Fish Sauce: 2 tablespoons
  • Cilantro Leaves: A handful, chopped
  • Oil: 1 tablespoon (coconut or neutral)
  • Salt: To taste

Instructions

  1. Preheat Your Equipment: Heat 1 tablespoon of oil in a large pot over medium heat until shimmering.
  2. Combine Ingredients: Add shallots, garlic, and ginger. Sauté for 2 minutes until fragrant. Stir in lemongrass and chili.
  3. Prepare Your Cooking Vessel: Pour in fish stock and coconut milk. Bring to a gentle simmer.
  4. Assemble the Dish: Add fish sauce and lime juice. Stir well. Taste and adjust salt as needed.
  5. Cook to Perfection: Add fish fillets. Simmer gently for 5–7 minutes until fish is opaque and flakes easily.
  6. Finishing Touches: Stir in chopped cilantro. Remove lemongrass if desired.
