Soft, chewy, and full of cozy cinnamon flavor, these no-bake Cinnamon Roll Power Bites are the perfect sweet snack made with oats, nut butter, dates, and a cinnamon sugar coating.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 8 to 10 Medjool dates, pitted
  • 1 tablespoon maple syrup
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons coconut sugar + 1/2 teaspoon cinnamon (for rolling)

Instructions

  1. Add oats, almond butter, dates, maple syrup, cinnamon, vanilla, and salt to a food processor.
  2. Blend until the mixture forms a sticky dough.
  3. Scoop tablespoon-sized portions and roll into balls.
  4. Roll each bite in the cinnamon sugar mixture to coat.
  5. Chill for 10–15 minutes, then enjoy or store for later.

Notes

  • Soak dates in warm water if they’re too dry for easier blending.
  • Use a small cookie scoop for even bite sizes.
  • Store in the fridge for up to 1 week or freeze for up to 3 months.
